Peeko Oysters: Peter Stein's Motto
Jan 15, 2026
It was a cold night in Cutchogue, ...

... but we had a good turnout for our first meeting of the new year "How Oysters Shape Our Shoreline, Tales From an Oyster Farm." If you weren't lucky enough to join us, here's a brief summary and a link to a video replay.
"Do well and good" is a motto that guides Peeko Oysters founder Peter Stein, and he has lived up to that quite nicely, handling up to 60.000 oysters a week during peak season and employing 11 full-time workers. Pete shared some of his innovative approach to growing and farming oysters. His business is not only successful, it's good for our bay: a single oyster can filter up to 50 gallons of water a day, and Peconic Bay is home to up to a million of them.
